Savory Snack Mix

This five ingredient nibble mix goes together in a snap, ready to bake in your oven or microwave.

6 4-inch rice or popcorn cakes, broken into bite-size pieces
1 cup low-salt pretzels, available in most health food sections
1 cup bite-size low-salt cheese-flavored or plain fish-shaped crackers
2 tablespoons I Can't Believe It's Not Butter, melted (See Note)**
1/2 teaspoon chili powder
1/2 garlic powder

Preheat oven to 325 deg. F.

In a large plastic bag with a tight-fitting seal, combine the rice cake pieces, pretzels, and crackers. In a small bowl, stir together the melted margarine, chili powder, and garlic powder. Pour over cracker mixture. Seal bag and gently shake mixture until well coated. Transfer to a baking sheet.

Bake, uncovered, for 25 minutes, stirring once or twice during baking.

Spread mixture onto paper towels to cool.

The mix can be stored at room temperature in an airtight container for up to 2 weeks.

MICROWAVE METHOD:

Prepare recipe as directed above, but place cracker mixture in a microwave-safe bowl or casserole dish. Microwave on 100% power on high for 2 minutes, stirring after 1 minute.

** Note: All of my recipes use margarine instead of butter. When choosing margarine, look for one that lists liquid vegetable oil as the first ingredient. Diet margarine contains water, so it's not suitable as a cooking substitute for butter or margarine.

Makes about 5 cups.
Serving size: 1/2 cup per serving.
