Barbecue Chicken Sloppy Joes
These sandwiches are indeed sloppy. In fact, you may want to eat them with a knife and fork! Buy a large enough chicken for the 2 cups you'll need here, and the leftovers can be used in other chicken recipes. That's why I love using rotisserie chicken--all the work is done for you, and there's always leftovers to make additional meals!

1/2 cup no-salt-added ketchup
1/3 cup water
2 tablespoons molasses
2 tablespoons cider vinegar
1 teaspoon Dijon mustard
1/2 cup sliced button mushrooms, fresh or canned, rinsed and drained
4 hamburger buns
2 cups rotisserie chicken, skin and all visible fat removed
In a medium saucepan, whisk together the ketchup, water, molasses, vinegar, and mustard. Cook over medium heat for about 1 minute.
Add mushrooms. Reduce heat to medium low and cook for about 3 minutes.
Meanwhile, put one bun bottom on each of four plates. Put about 1/2 cup mixed white and dark meat chicken on each.
Top with warm sauce and remaining bun pieces.**(See Note below)
Makes 4 servings.
**Note: For lighter eaters, use half a bun for each sandwich and serve open face.
